Trattoria Sant'Anna is the first place in the historic centre of Gangi dedicated exclusively to catering; the restaurant was born from the will of two friends, Santo Spitale and Antonio Mocciaro, who, betting on themselves and, above all, on the potential of their territory, renovated, these premises giving life to the Trattoria Sant'Anna. Palazzo Bongiorno is one of the most beautiful structures of eighteenth-century architecture in the Madonie. Our structure is located in the east wing of the building, and in the centre, there is a lovely garden with a breathtaking view of the panorama downstream of the village and the Torre dei Ventimiglia. The research and care of raw materials are fundamental for us; for this, we use meat coming exclusively from local farms, cold cuts, vegetables and products of the land, the aromas of the Madonie, the extra virgin olive oil, the cheeses, first of all, the provola delle Madonie and the renowned pecorino, the typical sweets and bread produced in Gangi. The freshness of products, careful selection of raw materials, attention to detail, dedication and passion are our "watchwords" and what we intend to offer you should you decide to begin this journey into the Gangitan food and wine tradition. The "Baglio Tramontana" reality was born in August 2021 with the idea of enhancing the Madonie area by offering local and seasonal culinary dishes revisited in a modern key. The Baglio Tramontana location has more than 120 seats distributed on different levels, including the courtyard (Baglio), the small terrace overlooking Castello, and the panoramic terrace with a view of the Madonie, Nebrodi and Etna. We are located in the historic centre of Gangi (PA), along the tourist route of Via Castello at number 137, just 200 meters away. From the "Castello Ventimiglia ", immediately after the Church of SS. Madonna della Catena is one of the oldest in the country. Here, history and tradition meet modernity and innovation, offering visitors a cultural and culinary experience made up of proximity tourism and slow food. Baglio: In Aragonese Sicily in the 16th century, the Baglio (in Sicilian: u' Bagghiu) was the courtyard with the entrance arch. The lower floors of the structure were intended for the homes of peasants and livestock, while the upper floors housed the lodgings of the nobility. Tramontana: The system is exposed to the fresh Tramontana wind coming from the North, which in summer gives the right coolness after hot days.

Our philosophy is precisely to combine territoriality, typicality and tradition. We favour local products, typical of the Madonita area, and seasonal, capable like few others of making our dishes unique and genuine. We offer our customers a cuisine that respects the ancient Sicilian culinary traditions, which re-proposes the flavours of the past, often unknown or forgotten, and sometimes carefully revisited and reinterpreted in a modern key. The preparation of our dishes is, if we like, "facilitated" by our geographical position, the Madonie Park, and by a local economy firmly based on agriculture and livestock farming. For our dishes, we select KM0 raw materials, simple but equally unique, from tasty and tender meats coming from local farms to delicious porcini, basilisk and country mushrooms, from fresh and mature cheeses produced by the ancient workers of local sheep farming, above all the fresh ricotta and Madonie provola, cured meats, strictly seasonal field vegetables, Manna, made almost exclusively in the Castelbuono – Pollina area, Polizzi's "bad" bean (slow food praesidium), local olive oil to bread and fresh hand-made pasta, made exclusively with local wheat flours. A rich and varied pizza menu completes our gastronomic offer. Our pizzas, made exclusively with local stone-milled wheat flours, have the lightness and digestibility guaranteed by a long leavening (48 H) and are cooked strictly in a wood-fired oven, using exclusively olive wood, which gives the pizza itself an unmistakable aroma and cooking.

Among our specialities, we list some dishes that cannot be renounced. The appetizer of the castle contains an explosion of flavours of our territory, such as cured meats and cheeses, omelettes and seasonal vegetables, pasta with black pig from the Madonie, cooked over a low flame with S'Elia tomato puree at km0 of our production, pasta with vegetables and legumes at km0, the pork knuckle cooked in a wood oven for eight hours, a vast choice of Madonite meats cooked on the grill such as sliced veal and pork steak, and finally our homemade Sicilian desserts as per tradition. Another speciality you can't give up is our gourmet hamburgers, prepared with our long-leavening bread and a selection of Madonita meat. Our pizza comes from an extended maturation dough, with a minimum of 72 hours up to 100 hours; our blend of selected flours is composed of ancient Sicilian grains, wholemeal flour and type 0 with toasted bran, with a high hydration, and the final result is a light and digestible pizza.
